Whole Wheat Yummy Waffles
1 1/2 Cup Whole Wheat Flour1 teaspoon baking powder
1/4 teaspoon baking soda
1 Tablespoon Cinnamon
1 Cup Old Fashioned Rolled Oats
1/4 Cup very lightly packed Brown Sugar, if you use white sugar use about 4 Tabelspoons
1/4 teaspoons Salt
1/2 Cup Apple Sauce
1 1/2 Cup Milk plus about 1/2 cup extra
2 Eggs, beaten

Mix 1 Cup Old Fashioned Rolled Oats with enough milk to make 1 1/2 Cups total. Add 1/4 teaspsoon of salt and 1/4 Cups of Brown Sugar to the milk imxture. Heat this in a microwave safe bowl until oats are cooked. This should be about 1 or 2 minutes on high. Add the apple sauce to the hot oat mixture.
Sift together the whole wheat flour, baking powder, baking soda and the cinnamon. Add the oat mixture to this and beat in the eggs. It should be thick, add enough milk to thin it until it is a little bit thicker than a standard cake mix. This should be about the 1/2 cup seen in the ingredients list but it will vary depending on if you use quick oats or old fashioned oats, the humidity at the time of cooking, etc. So be ready to add less than the 1/2 cup of milk.
After you pour the batter onto the waffle iron, sprinkle a few chopped nuts onto the top. Walnuts are excellent. For fun you can also try experimenting with adding food coloring to the batter, probably best to add it just before adding the last bit of milk. Blue-ish waffles are fun.
The less you mix the batter the better it will turn out. Stirring gets the gluten streched out and will make the waffles chewy. Stir it just enough to mix stuff together.
One last note, this recipe I devised completely myself. I wanted a good tasting and fiber-filled waffle and after a little experimenting and some reading on things like baking soda and applesauce, I landed here. I have made very little changes to the recipe since I came up with this. It just hits the spot in the morning.
